Chemistry of the renowned aromatic quality of Anxi Tieguanyin oolong tea that carries the unique floral connotations dedicated as "Guanyin Fragrance" by tea connoisseurs was studied. The exquisite characteristic was analyzed by comparing the volatile components in the tea with those in orchids and flowers of osmanthus and some
Magnoliaceae plants. The formation and release of the key aromatics in these flowers were superimposed on Tieguanyin tea to hypothesize a mechanism for the generation of "Guanyin Fragrance".
