窨制次数对桂花六堡茶滋味品质的影响

    目的 探究不同窨制次数对桂花六堡茶滋味品质的影响,为桂花六堡茶生产优化提供指导依据。
    方法 采用感官审评结合高效液相色谱等手段对不同窨制次数(0次、1次、2次、3次)的桂花六堡茶品质进行综合比较分析。
    结果 六堡茶加入鲜桂花窨制后,随着窨制次数增加,花香开始显现并逐渐浓郁,还伴有甜香,茶汤甜醇度显著增加,口感顺滑,含香持久,感官审评综合得分有所提高,但茶汤浓厚度略有下降。窨制对桂花六堡茶的主要化学成分有显著影响,窨制过程会导致茶黄素、茶多酚、游离氨基酸、酯型儿茶素(EGCG、ECG)含量及儿茶素品质指数下降,非酯型儿茶素(EGC、C)含量上升。与茶坯(窨制0次)处理对比,窨制1次后水浸出物、茶多酚、游离氨基酸与咖啡碱含量显著降低;与窨制1次处理对比,窨制2次后茶黄素含量与儿茶素品质指数显著降低,咖啡碱含量显著升高。
    结论 综合感官品质和茶色素、水浸出物、儿茶素组分等理化指标的变化趋势判断,窨制1次可能是桂花六堡茶较好的选择,窨制1次既有效降低了六堡茶的苦涩味,形成醇厚、陈香带花香的品质特征,又避免了多次窨制造成的生产成本增加。

     

    Abstract:
    Objective Repeated osmanthus scenting for processing Guihua Liubao Tea was evaluated.
    Method Guihua Liubao Tea was made without scenting as control or with once to thrice repeated exposures to osmanthus flowers. Aroma and taste of the teas made as well as the brewed teas were evaluated by a sensory panel and chemicals analyzed using liquid chromatography. The data obtained were compared to determine the optimal times of scenting for the tea-making, based upon the functional and sensory quality as well as operational cost.
    Result Floral scenting significantly imparted the osmanthus fragrance into the tea. Repeated scenting significantly accentuated the floral scent in the tea and improved the overall sensory perception with long lingering aroma and sweet, smooth taste of the brewed tea. However, the richness of the tea significantly declined with reduced concentrations of flavonoids, polyphenols, free amino acids, and caffeine. Even being scented merely once, the tea already showed significant decreases in polyphenols, theobromine, and free amino acids. And the second scenting further lowered the contents of flavonoids, water-soluble extracts, and ester-type catechins (e.g., EGCG and ECG) but increased those of the non-ester-type catechins (e.g., EGC and C). Hence, the critical functional catechin quality index of the tea was sacrificed due to the additional exposures as a result.
    Conclusion It appeared that scenting once was preferable for making Guihua Liubao Tea. Although repeated scenting would indeed enhance the tea aromatically, one-time exposure to osmanthus flowers could produce a sufficiently rich, floral, sweet, smooth, and mellow tea that tasted less bitter with appealing functionality. It would also save an added production cost if extra step was included.
