黄观音、金牡丹紧压白茶的压制工艺优化及其感官品质与理化成分相关性分析

Process Optimization and Physicochemical Properties of Compressed White Tea Made from Two Different Tea Cultivars, Huangguanyin and Jinmudan

    目的 探讨‘黄观音’‘金牡丹’品种制作紧压白茶的压制工艺,为紧压白茶的制作工艺优化、品质提升与多样化产品开发提供技术指导。
    方法 选用‘黄观音’‘金牡丹’2个茶树品种鲜叶,按照白牡丹工艺制成散茶,并运用正交试验方法设计压饼方式(冷压、蒸压)、压制压力(30、60、90、120、150 kN)、保压时间(20、40、60、80、100 s)和烘干温度(40、60、80 ℃)等不同因素和水平,考察其对紧压白茶样品感官品质的影响,并进行样品感官审评得分与生化成分含量、物理特性的Pearson双变量相关性分析。
    结果 正交试验及感官分析结果表明:两个品种感官审评得分最高的样品,其压制工艺方案一致;该压制工艺下,黄观音和金牡丹紧压白茶感官审评得分分别为94.75分和95.90分。相关性分析表明:紧压白茶样品的茶多酚含量和游离氨基酸总量与感官审评得分均呈显著正相关(r=0.358、0.346,P<0.05),样品破裂强度与感官审评得分呈极显著正相关(r=0.430,P<0.01)。
    结论 黄观音和金牡丹紧压白茶压制优化工艺为:蒸压、压制压力60 kN、保压时间40 s、烘干温度40 ℃。茶多酚和氨基酸等生化成分含量及样品破裂强度共同正向影响了黄观音和金牡丹紧压白茶的感官品质。

     

    Abstract:
    Objective Varied compressing conditions to make tea cakes with leaves plucked from two tea cultivars were tested to optimize the physiochemical quality of the products.
    Method Leaves plucked from Huangquanyin and Jinmoudan bushes were used in an orthogonal experiment designed to optimize the tea cake forming process. Conditions of cold and steam pressing under a pressure of 30, 60, 90, 120 or 150 kN, held for 20, 40, 60, 80 or 100 s, and dried at 40, 60 or 80 ℃ were implemented. Sensory evaluation, chemical analysis, and a cracking test were conducted on the tea cakes. Pearson bivariate correlations between the sensory quality and physicochemical properties were analyzed.
    Result The results of orthogonal test and sensory analysis showed that the test samples with the highest sensory evaluation scores of the two cultivars had the same pressing process scheme. The resulting Huangguanyin compressed white teas received an overall sensory score of 94.75, and the Jinmudan teas 95.90. The contents of polyphenols and amino acids in the tea cakes significantly correlated to the sensory scores with r=0.358 for Huangguanyin and 0.346 for Jinmudan (P<0.05). And the mechanical rupture strength extremely significantly correlated to the sensory scores of the compressed white teas with r=0.430 (P<0.01).
    Conclusion The optimized pressing process of Huangguanyin and Jinmudan compressed white teas is as follows, the steam pressing applied 60 kN compression pressure held for 40 s and dried at 40 ℃. The composition and contents of the flavoring compounds, such as tea polyphenols and amino acids, as well as the rupture strength positively affected the sensory quality of the two kinds of tea cakes.
